Breakfast can be boring, right? Not any longer with these amazing BBQ Pulled Pork Pancakes! These pancakes are the creation of @ninjacue. A BBQ legend that you should be following on Instagram. Today we are going to take a look at how you can recreate this masterpiece in your own home.
Firstly you are going to need to smoke your pork butt. The way that Ninjacue did this is as follows. Take your pork butt and apply a layer of mustard over all sides. This will act as a binder between the meat and the seasoning. On top of the mustard apply a liberal coating of salt, pepper, and garlic. Finally, apply a layer of Kosmos Q Killer Bee Honey BBQ Rub.
Smoke the pork at 250 degrees, spraying every 30 minutes after the first two hours with apple juice. Once the pork is up to 175 degrees wrap it in butcher’s paper and continue smoking until you reach about 205 degrees. Once the temperature has been reached remove the butt from the smoker and allow it to rest in a cooler for a couple of hours before pulling it.

Pancake Time
When making this recipe Ninjacue used Kodiak Cakes Power Cakes flapjack and waffle mix. These pancakes are packed full of protein and are incredibly simple to make as it’s a pre-mixed pack where you just add water. To copy the recipe exactly as the photo you will need to make four of these pancakes. They need to be fairly big as you will be putting the pork between them and you don’t want all the ingredients falling everywhere. With the pork resting and the pancakes made you are nearly there.
Get back out to your grill and get a few pieces of bacon on. The bacon needs to be cooked until crispy to give it a great texture and of course an even better flavor.
Assembling the pancakes is super easy. Place a pancake at the bottom and place a layer of pulled pork on top. Add another pancake and complete the process until all four pancakes are used. Place your crispy bacon on top and drizzle over the peanut butter maple syrup. Just like the pancakes you can purchase the peanut butter maple syrup from Kodiak Cakes. Add a knob of butter to the top and you are ready to indulge!
