For us, one of the greatest BBQ sides is bacon and cheese stuffed mushrooms. They take just a few minutes to prepare and are incredibly fast to cook as well. I wouldn’t light up the grill just for these but if I am cooking up a piece of meat for any occasion then it’s easy to make space for these. Plus, they have bacon in them so they are sure to be loved by all!
Ingredients
- 100g bacon, cubed
- 10ml olive oil
- Portobello mushrooms, medium size
- 75g Mozzarella, grated
- 40g Breadcrumbs
- Salt and black pepper
- Chives, chopped
- 20g Dijon Mustard
Method for Bacon and Cheese Stuffed Mushrooms
The first thing you are going to want to do is bring the grill up to temperature. If you are using a standard charcoal grill then you should put the coals down one end or on the other side of the grill if it’s a circular grill such as a Weber. This is because you don’t want the mushrooms to be cooking directly over the coals. Light the coals and bring the lid down on the BBQ. You want to bring the temperature up to about 190 C.
With the BBQ heating up you can start to get the mushrooms ready. It is not advisable to rinse the mushrooms under the tap so give them a little clean with a small brush or a paper towel to get rid of any soil that might be on them. Remove the stem from the mushroom and also the brown cap. Be careful not to break the mushroom when you are doing this. Chop up the mushroom stems into small pieces and save these as you will need them shortly.
Back Outside to the Grill
Open up your grill and place your skillet on the grill. If your bacon is looking quite fatty you wont need to add any oil to the pan. Add the chopped bacon to the pan along with the chopped mushroom stems and fry until golden brown. This should only take about five to six minutes to complete. Remove from the heat and place the contents of the pan into a bowl. To the bowl, you should add the mustard and breadcrumbs and mix into a paste.
With the mix prepared it’s time to assemble the mushrooms. Place some mozzarella at the bottom of the mushroom. One or two tablespoons of filling (depending on the size of the mushroom) and if you feel like it a little more cheese. Repeat this step for all of your mushrooms and place them on a tray. Open the lid of the grill place the tray inside and get the lid shut back down. It should only take about 10-15 minutes for the BBQ bacon and cheese-stuffed mushrooms to turn golden brown. As soon as this happens take them off and add a few chives on top. If you wish you can also add a little more parmesan cheese.
